Cookin’ with Carol shared this idea with me. And it sounds fabulous!
Warm Blueberry Compote with Granola
Serves 4
2 cups blueberries
1 tablespoon unbleached flour (or arrowroot)
1 teaspoon orange zest
1/4 cup orange juice
1/4 cup light brown sugar
1 cup granola
Bring blueberries, flour (or arrowroot), orange zest, orange juice and light brown sugar to a simmer over medium high heat, stirring occasionally. Reduce heat to medium-low and simmer for 5 minutes, or until mixture is thickened, stirring occasionally. Spoon mixture into cups and sprinkle 1/4 cup granola on each serving. Garnish with fresh mint. Tip – explore and choose organic ingredients, spring is a great time to create healthy habits!
