After I finished reading this, I wanted to go to Chef Pyle’s house for Thanksgiving!
I took a tour of Stephan’s home last spring when we did a Texas Legends piece on him for “Good Morning Texas” on WFAA-TV, Channel 8.
Stephan, what are you especially thankful for this Thanksgiving?
Good health and living in a city that is one of the most vibrant, forward-thinking cities is the world. I often joke that we are finally becoming the city we always thought we were. Also I am extremely grateful to have been named Chef of the Year by the Dallas Morning News.
What’s your favorite part of the Thanksgiving dinner?
My traditional Blue Corn Chorizo Dressing and a Pumpkin-Pecan Pie (yes, the 2 best pies in one).
What do you “have to have” at your house during the holidays?
Always Cranberry Mojo and lots of friends and family.
Do you cook or do you enjoy letting someone else be in the kitchen?
We all cook. That’s how the holiday is designed.
Do you have a turkey sandwich later in the day and watch the Cowboys?
Doesn’t everyone? I think it’s illegal not to.
What do you put on your turkey sandwich, mustard or mayo?
Mayo, of course, with tomatoes, pickled onion and arugula.
Happy Thanksgiving Stephan. Thank you for bringing such wonderful food and restaurants to North Texas and bringing Texas cuisine to the world.
