I absolutely love this lemon pasta because it’s delicious, it doesn’t have any cream or butter and it’s done in 15 minutes!
I’m a pasta addict but as much as I enjoy creamy sauces, my figure doesn’t. I serve this pasta with steamed broccolini on the side, with sauteed fish, or alone and it never disappoints.
Ingredients:
1 Lb pasta (I use bucatini)
Juice of 2 lemons
3 – 4 cloves garlic, diced
6 Tbsp Olive Oil
1 – 2 cups pasta water
1/2 cut chopped Italian Parsley
1 cup fresh grated Parmesean
crushed red pepper
Salt & Pepper to taste
Bring a large pot of salted water to boil and add pasta.
While pasta is cooking, saute garlic in olive oil until barely translucent.
When pasta if somewhat underdone, add pasta, 1/2 cup pasta water, lemon juice, Italian parsley and 2/3 cup Parmesean to pan. Use tongs to turns the pasta mixture over and over until it has absorbed all the liquid. Add more pasta water as necessary.
Turn into a bowl, garnish with salt & pepper, red pepper to taste and extra Parmesean.
