People tell me my complexion looks better than it ever has…

Of course I take care of myself by getting enough sleep and using good skincare.  And I also think that what we put in our bodies is just as, if not more important, than what we put on our skin. 

This soup is so healthy it makes me feel good just thinking about it!  Adjust the seasoning and type vegetables to suit your taste and enjoy,

 

 

 

1/4 cup olive oil
1 cup chopped yellow onion
1 cup chopped celery including leaves
4 cloves minced garlic
1 qt vegetable or beef stock
2 cups baby carrots
2 cups green beans (chopped in half)
2 cups new potatoes (cut in half)
1 bunch Tuscan Kale, chopped
1 container spiral butternut squash (Whole Foods carries)
Hot Sauce of your choice

Sauté onion and celery in olive oil until translucent
Remove from pan with slotted spoon & sauté garlic until translucent in remaining oil
Return onions & celery and add stock, simmer over low heat for 30 minutes until slightly reduced
Add carrots potatoes & green beans and simmer until tender
Just before serving add kale and spiral butternut squash and simmer til tender
Salt & pepper to taste and garnish with grated Parmesan
