This is a cake that is a favorite at my Stephan Pyles restaurant; I simplified it just a bit so that you can make it at home.

Stephan Pyles Warm Olive Oil Apple Spice Cake with Caramel Sauce
Ingredients for Cake:
1 ½ cup olive oil
2 cups sugar
3 eggs
3 cups all‑purpose flour
1 teaspoon baking Soda
½ teaspoon nutmeg
1 ½ teaspoons cinnamon
pinch ground cloves
pinch mace
½ teaspoon salt
3 ½ cup raw chopped apples, peeled
¾ cup chopped roasted pecans
2 teaspoons vanilla
Procedure:
Preheat oven to 325 degrees.
Sift all dry ingredients together. Set aside.
Blend olive oil and sugar in electric mixer at medium speed for 5 minutes. Add eggs, one at a time and beat well. Add dry Ingredients to oil mixture and combine thoroughly. Add apples, pecans and raisins and blend well with spatula. Pour batter into a buttered and floured 10‑inch spring form pan. Bake for 1 to 1 1/2 hrs. or until an inserted knife comes out dry.
Ingredients for Caramel Sauce:
¼ Cup Granulated Sugar
1 Cup Dark Brown Sugar
¼ Cup Pure Maple Syrup
¼ Cup Light Corn Syrup
1 Cup Heavy Cream
Procedure:
Mix all ingredients in heavy‑bottomed sauce pan. Cook over high heat until mixture reaches 210 degrees on candy thermometer. Let cool for 20 minutes and skim surface if necessary. Drizzle over cake. Sauce may be cooled and reheated in warm water.
